Well, so much for committing to writing an entry every week. Ha ha! Oh well! I'm back because I wanted to share a really delicious (and healthy) recipe that I fixed the other night. I guess it was about a month ago now that I was flipping through the channels and came across a show with someone grilling something on the Food Network. Turns out, the show was Grilling It with Bobby Flay (of Iron Chef fame). I don't know if anyone else out there does this, but I find that I'll watch a show like that, or at least part of it, and say to myself...gosh, that looks really good, I should get the recipe and make it! Well, I must have told myself that a hundred times, but I've never done it, until now. And frankly, based on the results of this recipe, I shouldn't have waited so long!
So...what did we have? We had the Citrus Grilled Halibut with Cucumber Pineapple Salsa in a Whole-Wheat Pocket. Now, we're a bit spoiled. We actually have halibut in the freezer that my husband caught in Alaska. If you don't have a fishing trip planned for AK any time soon, I'm guessing that your higher end grocery stores may have some in their fresh fish section. Summer is typically when you'll find it in the grocery stores in the lower 48. Halibut, for those that are unfamiliar with fish, is a white fish. It is not particularly fishy tasting, so its a good choice for those that are on the fence about preparing a fish dish...especially one that might have a slightly higher price tag. It is very flaky and moist when cooked properly, but is very, VERY easy to overcook (especially on a grill), so don't set this on the grill and walk away.
