Veggie Chocolate Chilli

This vegetarian chili recipe has been spiced up in a Mexican style by adding cocoa power to the mix. Although many people find this a surprising combination, it adds a unique richness to the sauce.

Ingredients
  • 1 cup green beans (fresh)
  • 1 14oz can kidney beans (rinsed & drained)
  • 15 button mushrooms (washed)
  • 1 14 oz can sweet corn (drained)
  • 1 chili (to taste) or add chili powder (to taste)
  • 1 14 oz can tomatoes
  • 4 Tbs tomato puree
  • 1 1/2 Tbs balsamic vinegar
  • 2 cloves garlic
  • 2 Tsp dry mixed herbs  (italian mix is ok)
  • 1 1/2 Tbs cocoa powder
  • Lemon Juice
Directions
  1. Chop the the chili into small pieces and mix together with the tomatoes, tomato puree, balsamic vinegar, herbs, cocoa powder and crushed garlic.  Use a hand mixer, food processor or blender to make a thick sauce.
  2. Chop the green beans in half and lightly sautee them in lemon juice together with the sliced onion.  Add the mushrooms, kidney beans, and sweet corn.  Sautee for a few minutes longer.  Veggies should still be crisp, not soggy.
  3. Add the thick sauce to the pan. Cover and leave to simmer for 10-15 minutes on low heat.
Servings:  4

This creates more of a dish than a soup.  You could always add more tomato juice to create a soupier texture.  Its a great detox recipe because of all the fiber added by the beans and mushrooms.  You could, however, add ground beef along with the other ingredient.

  1. What exactly is in the dried mixed herbs? I usually don't buy spice mixes since I seem to have all of the originals... :)
Italian sounds like basil and oregano - anything else?

  2. Oh, there it goes. I had to tab through in order to bring up the word verification box for the comments. But it was cut off, so maybe others are having trouble, too.

  3. A dried mixed herb is pretty common. In the baking section where the spices are. I have a fairly large container (for a spice container) of mixed italian herbs. So there is basil, rosemary, oregano, etc. all in there and mixed together. That is what I use. Its the easy-man's spice! :)

Excursions

Last night we booked an excursion for Monday in Kona. Dave has been itching to dive at Kona (not just snorkel) since before we went to Kona a couple years ago. He's finally going to have his chance! We have booked a dive/snorkel excursion for Monday. We're going to be doing a Manta Ray two tank dive. Well, let me correct that...Dave is going to be doing a dive along with friends Sip and Luke. Myself and my parents are going to snorkel. I'm really excited about this and I know my parents are going to be thrilled as well. They've never done anything like this before. The excursion starts in the afternoon with a late afternoon snorkel (or dive for those that are diving). Once the divers are in the water, then the snorkelers get to get in and check out the reef for a while. Then everybody gets out, has some dinner on the boat and then we head over to the second dive site where the Manta Rays feed. This is going to be really awesome!

Glacier Park - Sept 2009

On Sunday, September 6, we flew to Kalispell, MT and spent the remainder of the week hiking around northwestern Montana. We spent 4 days with my aunt and uncle, who live outside Libby, MT. Then we headed to Glacier National Park and enjoyed breathtaking scenery and gorgeous weather! Here are a few photos from our time in Glacier.
